This wine is
a Saigné—meaning it is juice that we drain off our Topanga Syrah before the wine
is fermented. The juice receives 12–16 hours of skin contact and is then
fermented in neutral barrels and aged sur lies for six months. Before bottling,
we blend in 9% Viognier. Lots of watermelon and strawberry aromas. Only 94
cases produced—and it's selling fast!
